Hello, my name is Jovan and today I would like to share with you a recipe for a delicious vegetarian breakfast that will provide you with energy for a good start into the new day.
The history of this recipe begins in our permaculture vege garten, not having much experience with planting vegetables, we planted as much of everything as our garden could accommodate. Among other things, about 200 zucchini seedlings. During puberty, which falls in the summer months, we received so much zucchini that we didn't know what to do with it.. At the same time, we had a lot of inquiries from our guests visiting the glamping site at Orange Eco Lad about purchasing a Algarve vegetarian holiday breakfast that included natural products from our farm. Here I came up with the idea of frying the zucchini and adding eggs. After the first attempt, it turned out to be a fantastic omelet !

What Product's are you need for Algarve vegetarian holiday breakfast?
here are the ingredients you need to prepare:
3-4 eggs, preferably in your own breeding ;-)
sprouts or chives or other fresh green spices
half a zucchini, I use one from our permaculture farm
three ripe oranges
croissant or breat
Place zucchini slices in heated olive oil, season with salt and pepper, you can also add some sweet paprika
Fry at medium temperature
When the zucchini is golden brown on the bottom, turn the slices over
Crack the eggs on top so that the yolk is whole and cover the whole thing with a lid.
Fry everything over low heat, covered
In the meantime
Take three ripe oranges - I use oranges from Orange Eco Land, they are very sweet and juicy - cut them in half and squeeze the juice using a home citrus juicer or a slow juicer. a glass of fresh orange juice will perfectly supplement our vitamin needs, orange juice is also an excellent remedy for various ailments.
Finally, sprinkle the omelet with prepared sprouts. The dish is very filling, but for those who are more hungry you can add something sweet at the end.
