Greetings, my name is Jovan, and today I am excited to share with you a recipe for a delicious vegetarian breakfast that will give you the energy you need to kickstart your day.
The story behind this recipe begins in our permaculture vegetable garden, where, despite having limited experience with planting vegetables, we decided to maximize our garden space by planting a variety of crops, including around 200 zucchini seedlings.
As summer approached, our garden began yielding an abundance of zucchini, leaving us with an excess of this versatile vegetable. Coincidentally, we also received numerous inquiries from guests visiting our glamping site at Orange Eco Land, expressing interest in purchasing a hearty Algarve vegetarian breakfast made with natural products sourced from our farm. It was then that I had the idea to create a zucchini omelet.
After a few experimental attempts, the result was a fantastic omelet that perfectly captured the flavors of our farm-fresh ingredients.
Zucchini Omelet (RECIPE)
Preparation time: 20 minutes
Ingredients
3-4 eggs, preferably fresh from the roost
Sprouts, chives, or any other other fresh herbs you have from your garden
Half a zucchini, I used one from our permaculture garden
Three ripe oranges
Croissant or bread
Salt
Pepper
Preparation
Heat olive oil in a pan and place zucchini slices in it. Season with salt, pepper, and optionally, some sweet paprika for added flavor.
Saute the zucchini slices over medium heat until they turn golden brown on the bottom.
Once the zucchini slices are golden brown, flip them over in the pan.
Crack the eggs on top of the zucchini slices, ensuring that the yolks remain intact. Then, cover the pan with a lid.
Fry everything over low heat, keeping the pan covered, until the eggs are cooked to your desired level of doneness. Enjoy your delicious zucchini omelet!
Don't Forget the Orange Juice (RECIPE)
Start by selecting three ripe oranges. I prefer using oranges from Orange Eco Land because they are exceptionally sweet and juicy.
Cut the oranges in half and extract the juice using a home citrus juicer or a slow juicer.
A glass of fresh orange juice will perfectly supplement our vitamin needs. Additionally, orange juice is renowned for its healing properties and is an excellent remedy for various ailments.

Finally, sprinkle the omelet with prepared sprouts. While the dish is already quite filling, for those with heartier appetites, you can consider adding something sweet as a finishing touch.
